Roast beef with stir fry carrots and zucchini







Ingredients
1kg T-side roast beef
Fresh rosemary leaves
Fresh thyme leaves
Worcestershire sauce
Salt and grounded pepper to taste
2 carrots
1 zucchini
1 shallot (thinly sliced)
2 clove garlic (finely chopped)

Instructions for roast beef
1. Marinate roast beef with rosemary, thyme, worcestershire sauce, salt and grounded pepper and leave in fridge for 6 hours or so
2. Place marinated roast beef in oven at 180 C for 60 minutes

Verdict
Meat turned out to be quite tough though roasted to medium well. Vegetables was yummy though.

Lesson learned
Forget T-side beef and use rib eye or rump instead.
