Coriander Prawn Salad



Ingredients
Large prawns
1 Tbs sweet chilli sauce
1 Tsp ground coriander
125ml (1/2 cup) olive oil
80ml (1/3 cup) lime juice
3 garlic cloves
1 tomato (peeled, seeded and chopped)
2 Tbs roughly chopped coriander
Salad greens

Method
Clean prawns, remove head, shell but leave tail attached
Mix together the sweet chilli sauce, ground coriander, half the olive oil, half the lime juice and half the garlic - add prawns, toss to coat then cover and marinate in the fridge for 30 minutes
Drain prawns, reserve marinade and cook on BBQ grill or hot plate for 1-2 minutes on each side or until cook. Brush with marinade occasionally.
Prepare dressing with rest of the olive oil, lime juice and garlic together with tomatoes and coriander in a large salad bowl.
Toss salad greens with dressing.
Serve prawns on top of salad.
Verdict
Davin absolutely loves it!! Especially since it is carb-free....

Grilled Pork Chop with Salsa topping and Oven Roasted Chips


Nasi Lemak with Chicken Curry...




Sambal Ingredients:
500 gm chilli paste
250 gm shallots
2 big onions
1/2 cup cooking oil
3 Tbsp sugar
2 Tbsp gula melaka
1/2 tsp salt
1/4 piece of belachan
1/2 tbsp assam juice (I used Tamarind juice instead, not sure if it is the same thing)

Method:
1. Slice shallots and big onions thinly.
2. Heat cooking oil and fry sliced shallots and big onions till fragrant.
3. Add in chilli paste and belachan and fry till thick about 1/2 hr.
4. Finally add sugar, gula melaka, assam juice and salt to taste.


Verdict :
Absolutely yummy!!!

Roast beef with Thyme and Black Pepper


Medium rare - yum!

Mixed berry yogurt slice



Ingredients
1 cup frozen mixed berries
3 / 4 cup pure icing sugar
4 cups plain soy yogurt
Honey, to serve
Mint leaves, to decorate
Strawberry salad:
250g punnet strawberries, quartered
1 / 2 cup frozen mixed berries, thawed
2 tblsps pure icing sugar

1. Grease a 19cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
2. Place berries, ½ cup of pure icing sugar and 3 cups of the yogurt in a blender and blend until smooth. Pour into prepared pan.
3. Place remaining yogurt and icing sugar in a medium bowl. Whisk until smooth. Drop large spoonfuls of yogurt mixture over berry mixture. Using handle of a spoon, swirl to create a marbled effect. Freeze overnight.
4. To make strawberry salad, combine strawberries, thawed mixed berries and pure icing
sugar in a small bowl. Gently stir until sugar is dissolved.
5. To serve, remove slice from pan. Cut into squares. Serve with strawberry salad and drizzle with honey. Decorate with mint leaves.

Verdict
Its good, yummy and healthy. Remove the pan 15 minutes from freezer prior to serving else the yogurt slice will be too icy.

Fish Fillet with Fennel and red capsicum salsa; spaghetti with ham and mushroom; beer batter chips



Ingredients
white fish fillet
Salsa
1 tsp fennel seeds
1/2 cup olive oil
2 tbs dry capers
1 small red capsicum seeded and finely diced
2 tbs balsamic vinegar
Instructions
Salsa
dry-fry the fennel seeds ina frying pan over medium heat for 1 minute or until fragant
remove fennel seeds and heat 1 tbs oil in the same pan over medium heat
while oil is hot (but not smoking), flash fry the capers for 1-2 minutes or until crisp then remove from pan
heat 1 tbs oil and cook the capsicum, stirring for 4-5 minutes or until cooked through
remove and combine with the fennel and fried capers


Verdict
It was a good meal overall but I had problems pan-frying the fish as it tends to stick to the pan... perhaps it is time we invested in a new non-stick frying pan :).
