Coriander Prawn Salad



Ingredients
Large prawns
1 Tbs sweet chilli sauce
1 Tsp ground coriander
125ml (1/2 cup) olive oil
80ml (1/3 cup) lime juice
3 garlic cloves
1 tomato (peeled, seeded and chopped)
2 Tbs roughly chopped coriander
Salad greens

Method
Clean prawns, remove head, shell but leave tail attached
Mix together the sweet chilli sauce, ground coriander, half the olive oil, half the lime juice and half the garlic - add prawns, toss to coat then cover and marinate in the fridge for 30 minutes
Drain prawns, reserve marinade and cook on BBQ grill or hot plate for 1-2 minutes on each side or until cook. Brush with marinade occasionally.
Prepare dressing with rest of the olive oil, lime juice and garlic together with tomatoes and coriander in a large salad bowl.
Toss salad greens with dressing.
Serve prawns on top of salad.
Verdict
Davin absolutely loves it!! Especially since it is carb-free....
