Mixed berry yogurt slice



Ingredients
1 cup frozen mixed berries
3 / 4 cup pure icing sugar
4 cups plain soy yogurt
Honey, to serve
Mint leaves, to decorate
Strawberry salad:
250g punnet strawberries, quartered
1 / 2 cup frozen mixed berries, thawed
2 tblsps pure icing sugar

1. Grease a 19cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
2. Place berries, ½ cup of pure icing sugar and 3 cups of the yogurt in a blender and blend until smooth. Pour into prepared pan.
3. Place remaining yogurt and icing sugar in a medium bowl. Whisk until smooth. Drop large spoonfuls of yogurt mixture over berry mixture. Using handle of a spoon, swirl to create a marbled effect. Freeze overnight.
4. To make strawberry salad, combine strawberries, thawed mixed berries and pure icing
sugar in a small bowl. Gently stir until sugar is dissolved.
5. To serve, remove slice from pan. Cut into squares. Serve with strawberry salad and drizzle with honey. Decorate with mint leaves.

Verdict
Its good, yummy and healthy. Remove the pan 15 minutes from freezer prior to serving else the yogurt slice will be too icy.
