Grilled Lamb Chops with Spicy Tomato Herbed Sauce



Ingredients
Lamb
2 tsp extra olive virgin oil
1 tablespoon fresh/dried rosemary leaves
1 teaspoon minced garlic
2 lamb loin chops
Salt and freshly ground black pepper
Spicy Tomato Herbed Sauce
2 tsp olive oil
2 tbs minced white onion
1 tsp minced garlic
1/2 teaspoon dried red pepper flakes (more if you like it spicier)
1 plum tomatoes (blanched, peeled, seeded and chopped)
1 tsp minced fresh basil leaves
1 tsp minced fresh oregano leaves
Juice of one freshly squeezed lemon juice
Sugar, salt and pepper to tast
Instructions
Meat
Marinate lamb for 2 hours turning occasionally
Grill for about 4-6 minutes on each side depending on thickness of the meat
Sauce
Heat oil in a saute pan, add garlic and onion and saute over medium heat for 3 minutes or until garlic and onion turn brownish
Add the rest of the ingredients and simmer for about 10 minutes, stirring occasionally.
Verdict
Another favourite!! We are not big fans of lamb but the sauce sure makes a difference.
